- Summary
- Sodium metabisulphite has been used by the UK fishing industry for many years to control the effects of melanotic blackening in prawns (Nephrops norvegicus). Melanosis is the formation of dark pigmentation in the skin or outer tissue. Following recent court cases relating to high levels of sulphite residue and the requirement for allergen labelling, there is now interest to secure alternative treatments or processes to control melanosis.
