Acceptability of Plate Size of Farmed Turbot in London Restaurants

Retyped in 2005. Wild caught turbot usually weigh between 1.0kg and 2.5kg (2 to 5lb). A trial was conducted in which farmed fish in the weight range 230-680g (0.5-1.5lb) were delivered to three restaurants in a well known chain of speciality fish restaurants in London and to a public house in Twickenham with a very good luncheon trade.

A series of experiments was set up during 1985 to investigate losses of mussel seed from spatted ropes following transfer between sites. Batches of differently rigged collector ropes were transferred between Loch Etive and Loch Sunart on 24.7.85, 21.8.85 and 18.9.85.
