Acceptability of Plate Size of Farmed Turbot in London Restaurants

Retyped in 2005. Wild caught turbot usually weigh between 1.0kg and 2.5kg (2 to 5lb). A trial was conducted in which farmed fish in the weight range 230-680g (0.5-1.5lb) were delivered to three restaurants in a well known chain of speciality fish restaurants in London and to a public house in Twickenham with a very good luncheon trade.
