Food Hygiene and HACCP Training Courses

We support food hygiene and HACCP training courses at multiple levels which are available through remote training or via online learning programmes.

Food Hygiene

Good food hygiene is really important. It helps to make sure that food is safe to eat and prevents food poisoning. Businesses must make sure that employees working with food have appropriate supervision and training in food hygiene.

Introductory Food Hygiene

This course is suitable for people who work in the seafood industry as counter assistants, customer service assistants and fishmongers.

  • It is a half-day taught course which includes three hours of teaching and a 30 minute multiple-choice exam.
  • People who pass the exam will receive a Royal Environmental Health Institute of Scotland (REHIS) or Seafish qualification.
  • The course is usually delivered for a single business but public courses are also available.
  • The cost is £100 per person for remote delivery. Funding may be available.
  • The course workbook and exam pack are available in English, Latvian, Lithuanian, Polish, Portuguese, Romanian, Russian, Spanish and Welsh.

Elementary Food Hygiene

This course is suitable for people working as supervisors in factories and for fish friers, customer service staff and fishmongers.

  • It can be delivered as a taught or online course.
  • The one-day taught course is usually delivered for a single business but public courses are also available.
  • The open learning course requires around 10 hours of study plus attendance at an exam.
  • People who pass the exam will receive a Royal Environmental Health Institute of Scotland (REHIS) or Seafish qualification.
  • The cost is £100 per person for remote delivery and funding may be available. The online learning programme is fully funded for a limited period.
  • The course workbook and exam pack available in English, Lithuanian, Polish or Portuguese.
  • For the taught course a REHIS handbook is available at an additional £4 charge.

Intermediate Food Hygiene  

This course is suitable for people working as managers in factories, fish and chip shops and fishmongers.

  • It can be delivered as a taught course or by remote learning.
  • The three-day taught course is available at many venues across the UK.
  • The remote learning course requires around 20 hours of study and attendance at an exam.
  • People who pass the exam will receive a Royal Environmental Health Institute of Scotland (REHIS) or Seafish qualification.
  • Costs vary for the taught course. The remote learning cost is usually around £300 per person. Funding may be available.
  • Materials for the taught course will be supplied by the training provider.
  • Remote learning materials, including a workbook, textbook and DVD, will be supplied by Seafish. Telephone tutor support is also available.

Hazard Analysis Critical Control Points (HACCP) Training Courses

HACCP stands for hazard analysis critical control points. It is a food safety management system which aims to spot potential food safety hazards at each step in food manufacture and then introduce practices and procedures to remove or reduce the risks of them happening.

Introduction to HACCP in the seafood industry

This course is suitable for people working in the seafood industry as counter assistants, customer service assistants and fishmongers.

  • It is a taught course which includes four hours of teaching time followed by 30 minute exam.
  • It is usually delivered for a single business but public courses are also available.
  • People who pass the exam will receive a Royal Environmental Health Institute of Scotland (REHIS)/Seafish qualification.
  • It costs £100 per person when delivered to a group through remote delivery. Funding may be available.
  • The workbook and exam pack are only available in English.
  • Sector specific training materials are available for bivalves, chilled fish, smoking and fish frying.

Elementary HACCP by eLearning (e-EHACCP)

This is a generic food industry course is suitable for people working in the seafood industry in a more senior role (team leader, supervisors, HACCP team members etc).

  • People who pass the exam will receive an Elementary HACCP in food manufacturing qualification from Royal Environmental Health Institute of Scotland (REHIS).
    • It is aimed at food manufacturing businesses, but is also suitable for food retail including fishmongering and fish frying.
  • It is a short eLearning course which includes a 30 minute invigilated online exam.
    • There are two online modules that make up the course.
    • The exam is similar in style to our food hygiene and H&S multiple choice exams.
    • The exam is administered by us and delivered using Zoom or Teams.
  • It costs £50 per person for both the eLearning materials and the online invigilated exam. Funding may be available.
  • The learning materials are only available in English, but we are working to offer the exam in other languages.

  • It is a requirement is that trainees have an Elementary Food Hygiene qualification (or equivalent) before they start this programme.
  • We will issue you with appropriate login details.
  • We will invoice you for the cost of the e-HACCP course after applying any appropriate subsidy.
