Processing

Well-trained staff in the fish and shellfish processing sector have high-quality preparation and food handling skills, some may require excellent technical or engineering skills and everyone must demonstrate impeccable food hygiene standards.

Processing training and apprenticeships are offered across much of the UK, and can give both experienced processors and beginners a significant edge over the competition. Seafish offers a number of taught courses, including:

  • Fish Smoking (eLearning and practical skills)
  • Fish Filleting Training Programme
  • Product Knowledge
  • Food safety and hygiene from level 1 to level 3

Apprenticeships

Fish and shellfish industry skills (FSIS) apprenticeships are available throughout most of England, Wales and Northern Ireland at intermediate level, with advanced level apprenticeships becoming more common.  In Scotland there is a Level 2 fish and shellfish modern apprenticeship in processing.

The Intermediate apprenticeship is based around this Level 2 FSIS NVQ, while the Advanced apprenticeship has this FSIS qualification at its core.
