Acceptability of Plate Size of Farmed Turbot in London Restaurants

A trial was conducted in which farmed fish in the weight range 230-680g (0.5-1.5lb) were delivered to three restaurants in a well known chain of speciality fish restaurants in London and to a public house in Twickenham with a very good luncheon trade.
