Parasites in fish: new Guidance Note

Seafish has produced a Guidance Note on parasites in fish. It takes into account Regulation 1276/2011, which amended the 853/2004 Hygiene Regulation on 8 December 2011. The new Regulation introduces a new permissible time-temperature combination for the inactivation of parasites of -35°C for not less than 15 hours. It also exempts seafood that has been preserved as frozen fishery products for a sufficiently long period.
