Ingredients 6 large herring or medium mackerel, filleted
Spicy Marinade:
1 x 5ml spoon (1 teaspoon) olive oil
1 small onion, finely chopped
2-3 x 5ml spoon (2-3 teaspoons) prepared Cajun spices
1 x 15ml spoon (1 tablespoon) tomato purée
4 x 15ml spoon (4 tablespoons) red or white wine
Sweet Marinade
grated rind & juice 1 lemon
2 x 15ml spoon (2 tablespoons) sherry
1 x 15ml spoon (1 tablespoon) brown sugar
1 x 15ml spoon (1 tablespoon) fresh chopped chives

Method
Pre-heat grill or barbecue
To make the spicy marinade, heat the oil in a small pan and cook the onion until soft, stir in the spices and tomato purée then add the wine. Leave to cool.
To make the sweet marinade, blend all the ingredients together.
Cut the herring or mackerel fillets into 5cm (2") pieces. Thread onto skewers and divide between two shallow dishes.
Pour over the prepared marinades, cover and leave to marinate in a cool place.
Cook over a prepared barbecue or under a hot grill for about 10 minutes, turning frequently and basting with any remaining marinade. |
