Ingredients 225g (8oz) mixed crabmeat
half an onion, grated
150ml (5 fl oz ) white sauce
1 x 5ml spoon (1 teaspoon) tabasco sauce
1 hard boiled egg, chopped
2 x 15ml spoon (2 tablespoons) natural yoghurt
salt and black pepper
1 x 15ml spoon (1-2 tablespoons) Parmesan cheese
paprika
lime wedges, to garnish
Serves 2 Tip: Try substituting 225g (8oz) of cooked flaked smoked fish such as cod or haddock for the crabmeat.

Method
Make up white sauce using a packet mix or: place 150ml (5 fl oz) milk, 15g( half an oz) butter or margarine and 15g (half an oz) flour together in pan and cook gently, stirring continuously until thickened.
Stir crabmeat, onion, tabasco and egg into the sauce.
Simmer for 3-4 minutes, then remove from heat and stir in yogurt and seasoning.
Spoon into individual dishes, and sprinkle with parmesan and a little paprika.
Place under a low-medium grill and cook until golden brown.
Garnish and serve with a tossed green salad. |
