General Traceability Requirements
Traceability requirements are set out for all foods in Regulation 178/2002 (and are in addition to the seafood-specific traceability requirements of the Fish Labelling Regulations). Regulation 178/2002 requires the traceability of all foods through all stages of production, processing and distribution. Specifically, it requires that food businesses have to keep records of businesses who have supplied them with food and businesses they supply food to. So for each food item, they must be able to identify their supplier and their customer and, if required, make the information available to enforcement officers.
