Mediterranean smoked mackerel and bean salad

This salad is a wealth of all things Mediterranean. Serve as a starter or main meal with lots of crusty bread.

Cooking time: 15 minutes
Serves: 4
Ingredients:
110g mixed salad leaves
350g smoked
mackerel
110g green beans, cooked
4 cherry tomatoes, halved
4 hard boiled eggs, quartered
handful black olives
8 anchovy fillets 4
4 marinated artichokes hearts, drained and halves
For the dressing:
6 tbsp olive oil
1 tsp Dijon mustard
2 tbsp white wine vinegar
salt and pepper
Method:
Place the salad leaves in a large serving bowl.
Break and flake the mackerel onto the salad leaves.
Add the beans, tomatoes, eggs, olives and anchovies and
artichokes.
Place all the dressing ingredients into a bowl, season and whisk
well.
Pour over the salad, toss and serve immediately.
