Orange topped cod

This dish is full of fresh flavours.
Ingredients:
2 x 170g (6oz) cod loin
1 x 15ml spoon (1 tablespoon) fresh chopped mint
30g (1oz) butter, melted
salt and black pepper
1 oranges, segments, juice retained
handful of rocket leaves, for garnish
Method:
Place the fish in a suitable dish. Mix together the mint and butter and pour over the fish. Season.
Place the orange segments on top of the fish. Cover and cook on HIGH for
3-4 minutes.
Serve topped with a few rocket leaves alongside a ready prepared couscous salad.
