Prawn and avocado salsa cocktail

Makes 8

Preparation time: 15 minutes

Cooking time: 5 minutes

Ingredients:

2 rashers smoked back bacon, derinded

15ml (1tbsp) olive oil

1 avocado, stoned and peeled

1/4 small red onion, sliced

15ml (1tbsp) chilli sauce

15-30ml (1-2tbsp) fresh chopped coriander

5ml(1tsp) lemon juice

Freshly ground black pepper

200g (7oz) large cooked peeled prawns, thawed if frozen

8 large little Gem lettuce leaves, washed

Method:

1. Finely chop the bacon. Heat the oil in a frying pan and cook the bacon over a high heat for about 5 minutes, stirring occasionally, until very crisp. Drain on kitchen paper and set aside.

2. Dice the avocado and place in a bowl. Stir in the red onion, chilli sauce, coriander, lemon juice, pepper and prawns.

3. Arrange the lettuce leaves on a plate and divide the prawn mixture between the leaves piling high. Scatter over crispy bacon.
