Christmas prawn bruschetta

prawn bruschetta

Cooking time : 5 minutes

Ingredients:

1 x  flavoured ciabatta loaf of your choice e.g olive, plain, sundried tomato

40ml (21/2tbsp) creamed horseradish

200g (7oz) cream cheese

315g (10oz) large cooked peeled prawns, thawed if frozen

7 small figs

rocket leaves

Freshly ground black pepper

Method:

Preheat a grill. Cut the ciabatta loaf diagonally into 1cm (1/2in) slices. Place on a baking sheet and toast on both sides. Remove from the heat and allow to cool.

Beat together the horseradish sauce and cream cheese until smooth. Divide between the toasts spreading thickly.

Cut each fig into 6 small wedges and arrange 3 on top of each toast. Divide the prawns between the bruschetta and top with a small pile of rocket leaves. Season with freshly ground black pepper.
