Potted Devon crab

INGREDIENTS

  • 400g Devon crabmeat cleaned and picked
  • 200g butter melted
  • 2g cayenne pepper
  • 1g lemon zest
  • 1g salt
  • 1g mace
  • 1/4 tsp nutmeg
  • 30g lemon juice
  • Melted butter for the top

Serves 4

METHOD

  • Melt the butter, add the cayenne pepper, mace, nutmeg, lemon zest and leave to one side
  • Dry the crab well then chop it roughly, add the salt and lemon juice mix well and leave for 20 minutes.
  • Fold in the 200g melted butter to the crab mix then spoon the mix evenly into the ramekins and refrigerate till set.
  • Seal each dish by pouring a thin layer of the butter over each. Refrigerate for at least 6 hours before serving. Serve with hot toast.
