Potted Devon crab

INGREDIENTS
- 400g Devon crabmeat cleaned and picked
- 200g butter melted
- 2g cayenne pepper
- 1g lemon zest
- 1g salt
- 1g mace
- 1/4 tsp nutmeg
- 30g lemon juice
- Melted butter for the top
Serves 4
METHOD
- Melt the butter, add the cayenne pepper, mace, nutmeg, lemon zest and leave to one side
- Dry the crab well then chop it roughly, add the salt and lemon juice mix well and leave for 20 minutes.
- Fold in the 200g melted butter to the crab mix then spoon the mix evenly into the ramekins and refrigerate till set.
- Seal each dish by pouring a thin layer of the butter over each. Refrigerate for at least 6 hours before serving. Serve with hot toast.
